Create a Fall Bucket

Hello,

Fall is coming soon, so let's get this bucket list together! If Autumn was all year around I will take it and will not complain. This is my favorite season I love the scenery, the weather, the fashion, anything that is trending around this time. How I came up with the idea of a bucket list for Fall is when I was on Pinterest. I was looking up things to do and do some exploring in different areas where I live. Of course searching for one thing it leads to another, and that's how Fall Bucket List came in mind.

To make this fun and interesting is to make a checklist. Summer is about to leave so let's think ahead and get this Fall Bucket List together.

Getaway

Getaway have several locations. The company provided tiny cabins that are located in the woods where there are a lot of things to explore around, it's just like camping. They supply you with everything you need: kitchen, mini refrigerator, a shower, queen size bed, and many more. Check them out.

This will be a wonderful experience to explore the outdoors. No need for a tent where you have a tiny cabin with a huge window to see the beauty of nature.

Make a Fall wreath...Research D.I.Y Projects

I love D.I.Y Projects so this will be fun to make. I did a winter wreath but I halfway complete it. Michaels, A.C. Moore or any other craft stores is good to get your craft supplies on making a wreath. Go to their websites and check different kinds of craft to do for the season.

Go to the mountains

How beautiful is seeing the mountains up close and looking at the beauty from the top of the mountains. The beauty is when getting up early to see the sunset.

Farmer's Market

It is the harvest season, so all the fresh fruits, and vegetables are display for you to look, feel, and purchase. Go to your local farmer's market and/or sometimes the farmers be will on the side of road by their farm with their products.

Pair Wine With Seasonal Foods

I like to taste different wines and know which wine go with which type of food and dessert, specially when preparing for a gathering and/or dinner. Going on the web it's easy to find the information, but the fun part is to go to a wine festival. The first time I went to a wine festival in 2016 was a Caribbean theme where Linganore Winery & Vineyard hosted the event and others. I like how I was able to enjoy the live music, taste the food and sample different wines and knowing which wine goes with different types of food and dessert. Most wine festival do have where you can tour to their vineyard, learn the history and the making of their wine. Eventbrite and GroupOn are the best websites to check on wine festivals and receive discounts!

Transition Trending Summer To Fall Trending

Getting things together for the fall season should be fun! Everything that was packed away now it's the time to get them out of storage. Things you don't want no more or can't fit, donate them to your local organization/charities, or thrift store.

Veggie Black Bean Burger Sliders

Hello,

This well-known burger is known in the veggie community. Lately I have been a pescatarian, the only meat I eat is seafood. This is not my first time as a pescatarian so I know the do's and don'ts which is very easy don't eat other meat than seafood.

Black bean burger is not new to me but it's new to me cooking it! My first time eating the burger was at a restaurant, I saw it on the menu and wanted to try it out. Reading the ingredients I knew it was a vegetarian dish. This was about 1 or 2 years ago, fast forward this pass Sunday. I went to a gathering I knew I couldn't have no meat except seafood. Looking at the menu and saw Black Bean Burger, I went ahead an order it. I was thinking to myself I never try to make a veggie burger, the ingredients are similar so, why not.

Making a burger is easy you can't go wrong preparing it.  Went to the grocery and purchase my items. I didn't want a regular size burger, so I went ahead and got sliders because the burgers were going to be my afternoon healthy snack.

Ingredients:

1 can Black Beans Canned
1 cup of Frozen or Fresh Bell Peppers
1 cup Bread Crumbs or Flour
1 large Egg
¾ cup Cilantro
¼ tbsp of any seasoning you will like to add to the ingredients for more flavor
Slider Hamburger Bun
¾ cooking oil
Romaine Lettuce (optional)
Cole Slaw (optional)

Instruction:

Blending Black Beans and Bell Peppers

  1. I use one cup of the beans to blend in the blender and the others I left whole. I don't have a food process, so I substitute with my smoothie and food blender.
  2. I pour in the cup of black beans, ¼ tbsp of cilantro, and some of the bell peppers blend them.
  3. In the bowl I add bread crumbs, seasonings (black pepper, salt, paprika, smoked paprika, ground mustard, and dried parsley) one egg, and then add the blended ingredients to the bowl.
  4. Mix the ingredients and then add the rest of the beans, bell pepper, and cilantro.
Note: The bread crumbs or flour and egg help put all the ingredients together so they can stay together when it comes to cooking.
  1. I use olive oil to cook them. You only need ¾ tbsp or less of cooking oil for each batter. When I cook them, I had to add a little more oil to each burger set I cooked.
I did two methods for this:
  1. I use a scooper and place them in the pan
  2. I use the ice cream scooper place it in my hand and try to make it round and then place it in the pan.

WHEN FLIPPING THEM OVER

  1. When I flip them over I use a spatula, they can be tricky, after I flip each one of them over, I press them down a little so it can cook thoroughly.
  2. Once the other side is cooked I flip it over again for a minute and them take them out and get ready for the other set of burgers.
  3. I place them in a cooling rack, let them sit for about 2 minutes.

Now the fun part, eating!!!

Egg Muffins

Hey, have you ever want to make your breakfast little more unique and exciting when it comes to breakfast time? Of course the famous breakfast foods: bacon, egg, hash brown, sausage, grits, pancakes/waffles, fruit on the side, and others! Nowadays, when it comes to breakfast it's more of different breakfast burritos, egg muffins, avocado on toast with other toppings, a smoothie bowl and much more. Eating healthy is trending and becoming popular than before, I am going to say 75 - 80% (making a prediction) of people is heading the path on staying healthy by starting their first meal of the day with breakfast. Growing up I was not a fan on eating breakfast, breakfast wasn't my first meal of the day, until I got a little older and start appreciate breakfast more. My breakfast is a cup of coffee! I start trying fruits with yogurt, scrambled eggs, trait mixes, an on the weekends bacon, scramble eggs, grits, and nice crispy hot dog.

I have been searching the web on ideas for a healthy breakfast that's been trending. I haven't try all of them but I am planning on doing so.

The first one on the list is Egg Muffins!

Chinese Food Craving

Vegetable Egg Foo Young with Steam Rice....Fried Wings with Mambo Sauce

I don't know what it is but Chinese food hit the spot for me. When I don't know what to eat, something about the craving of delicious Chinese food comes in mind. I have my favorites: egg foo young, szechuan chicken or shrimp, wings with mambo sauce! I love to put some of the food on top of my egg roll along with hot mustard, and duck sauce.

On this day, I was craving this all day and even the day before. I wouldn't wait to get off and head to one of my favorite Chinese place. Once I receive my order I wouldn't wait to get home to relax and get into this delicious food. I order a veggie egg foo young with steam rice, along with wings and mumbo sauce.

When I was a little girl, I use to see my father always order this meal with pork. My first time tasting egg foo young I didn't know what was inside of it but it taste good. Egg foo young is a Chinese omelette with the ingredients of eggs, onion, carrots, peas, bean sprouts, bell pepper, soy sauce and sesame oil. Can't forget the delicious gray that is pour heavy on the egg foo young. I always have it with steam rice.

Szechuan Chicken with Steamed Rice

Szechuan is a spicy Chinese dish that has the ingredients of veggies, and/or meat with steam rice served. What make this dish popular is the sauce which is Szechuan; mix ginger, garlic, red pepper, soy sauce, chili garlic sauce and sugar along with broth, cornstarch, and soy mixture. My uncle always get this meal so here is another meal that I was introduce to!

If you haven't try these meals out, what are you waiting for?!?

Meal Prep - Mango Hawaiian BBQ Dry Rub Chicken

Hawaiian BBQ Dry Rub Chicken

It's Spring but it feel like Summer!!! Summer is coming and BBQ is trending! I bake some dry rub drumsticks for Memorial cookout and it was my first time cooking dry rub food. First time not so bad, hey if you know how to fry and bake food you are GOOD! I was finding a delicious meal for this upcoming week, I look up some pins I save in my Eat - Delicious Meals' board, I came across Mango BBQ Chicken with Mango Salsa and Rice.
When I saw this meal I was thinking of Hawaiian. Here comes my creative, because dry rub is still fresh in my mind from the cookout, I wanted to add it in the receipt. My first time seeing Hawaiian BBQ was at Target, I couldn't think of a receipt right away to cook, but now I do. Let's get started!!!

Ingredients

1 pack of Skinless chicken breast tenderloins

1 cup Sweet Baby Rib Hawaiian Style Barbarce

1 pack Mango salsa

1 cup 5 Minute Jasmine rice
Half of Avocado
Fresh leaves (cilantro, parkley, or others)
Romaine lettuce
Grape or cherry tomatoes
Olive oil
1/2 tbsp Brown Sugar
1/2 tbsp Honey
Dry rub seasoning (1/2 tbsp each of cumin, garlic powder, onion powder, cayenne pepper, brown sugar, mustard powder, ground cinnamon, smoke paprika, paprika, chill powder, 1/4 tsp black pepper and salt)

Instructions:

Marinated chicken overnight with olive oil or any cooking oil, Hawaiian BBQ and dry rub seasoning. Keep reading!

Mango salsa: If you can't find already made mango salsa at the store, go head and purchase the ingredients;

mango 3 ripe mangos, diced

1 medium red bell pepper, chopped.
½ cup chopped red onion.
¼ cup packed fresh cilantro leaves, chopped.
1 jalapeño, seeded and minced.
1 large lime, juiced (about ¼ cup lime juice)
⅛ to ¼ teaspoon salt, to taste.
Prepare the salsa a day before, so all the ingredients can combined longer for better taste.

Mango Salsa store pack don't have avocado in it, so go ahead and add it to the mix!!!

Marinate chicken

Get a bowl an add all the seasonings that you going to use for the dry rub, pour 1/2 tbsp of brown sugar and honey with the seasonings, and mix them together.

Take out the chicken breast tenderloin (tenders), cut into 2 or 3 slices and then cut the chicken again into chunks.

Add the chunks into the same bowl where all the seasoning is in and then pour 1 cup or more of Hawaiian BBQ on top of the chicken.

Stir it all together!

Once you complete that, cover it up and place the bowl in the refrigerator until the next day.

Let's get ready to cook

Turn on oven to 355 degrees.

Spread or spray olive oil or any cooking oil on cooking rack so the chicken will not stick on the rack while cooking.

Place the marinate chicken on the rack.

Let it bake for 30 minutes and turn it over in 15 minutes. Before turning chicken over in 15 minutes, sprinkle cooking oil on top of the chicken then turn it over; so both sides of the chicken can cook for 15 minutes.

Before turning off the oven, make sure the chicken is cook inside by poking a knife or fork in the chicken to make sure there is no pink color.

Once chicken is cooked, turn off oven and get ready to cook rice.

Get a pot, pour 1 cup of water, and 2 pinch of salt. Turn on stove close to high and wait until water start to boil before putting in rice.

Once the water come to a boil, pour in 1 cup of Jasmine rice or any rice and turn off stove. Remove the pot from the stove top that it was on and let the rice sit for 10 - 15 minutes.

After 10-15 minutes stir the rice, if there is still some water left, and the rice looks done go head and pour the extra water out.

***You don't want water down rice, so what I do if I put too much water I will get a paper towel place it on top of the rice place the lid on top of the paper towel and flip it over. Let it sit for 5-7 minutes. The extra water will soak into the paper towel.

You can add cilantro, parsley, any flowering plant to rice for little flavor and make it look pretty.

Rinse the romaine lettuce.
You don't want moisture to settle on the leaves so go ahead and place it on top of paper towel or more to remove the water, and to keep the lettuce chucky and not soggy.

Start chopping the romaine lettuce.

Once everything is done and cool off, start putting everything together in the containers that is use for the week!

Enjoy!!!

It's Coffee Time...Afternoon

Good afternoon,

I don't know about you but for me, when I come home from work, I go to my bedroom get settled and light some candles. I love the scent of pumpkin and anything that bring the scent of autumn.

Now, today I wanted to fix some tea when I got home. I saw some apples, and decided to slices a green apple to put in my tea. I already add a slice of lemon, slice of orange, cinnamon stick in the mix along with sugar honey, and ground pumpkin spice pie or ground nutmeg. I slices an apple, add two slices along with one slice of lemon and orange. I never add apple in my tea. I'm the type of person that like to try new things but depend on what it is. As my coffee maker heating up, I add sugar, honey, ground pumpkin pie spice, slices of apple, lemon, orange, and  one cinnamon stick. Yep, I hook that tea up. I let it set for a minute before drinking it, I wanted all the ingredients bend in. I use Lipton black tea bag. It's not bad with all the flavors. I have my vitamin, this is nice for those cold days. Drink the nice hot tea, with lemon juice or fresh slice lemon, and slice of orange; whatever else you like to add in your tea!!!

The rest of the slice apple, I put in a container and add some trail mix, that right there is my late snack.

That's all folks!!!!
